I made these girlie cupcakes for a bridal shower this weekend. I adapted the recipe from a layer cake served at the Hollywood Brown Derby restaurant at MGM Studios in Disney World-they got their recipe from the original Hollywood restaurant. The Brown Derby is the home of the original Cobb Salad, so if you want to serve that as a light summer dinner, these would be the perfect dessert! The cake uses the grapefruit sections as a layer--since I didn't want to cut each individual cupcake in half in order to stick a grapefruit section in, I needed to figure out how to get the grapefruit color and taste into the batter.
Ingredients:
One 16 oz jar grapefruit sections (found in the refrigerated area of the produce section)
1 3/4 c sugar, divided
3 t baking powder
1 t salt
3 large eggs, separated
1/2 c water
1/2 t cream of tartar
1. Drain the grapefruit sections and puree in a blender or food processor. Combine in a saucepan with 1/4 cup sugar, and bring to a boil. Cook down until the mixture resembles a very thin jam, then let cool.
2. In a large bowl, sift together the remaining sugar, flour, baking powder, and salt.
3. In a medium bowl, whisk together the egg yolks, oil, cooked grapefruit mixture, and water until smooth.
4. Whisk in the flour mixture.
5. Beat the egg whites and cream of tartar in an electric mixer until stiff peaks form.
6. Gently fold egg whites into batter with a rubber spatula, until just mixed.
7. Pour into paper-lined muffin cups. Makes 24-30 cupcakes.
8. Bake for 15 minutes at 350 degrees.
Frosting:
Ingredients:
3 8 oz bricks softened cream cheese.
2 cups sifted confectioner's sugar
finely grated rind of one pink grapefruit
1. Beat cream cheese until fluffy
2. Add lemon juice and grapefruit rind
3. Gradually beat in powdered sugar
After cupcakes are cool, frost and decorate with grapefruit flavored Jelly Bellies.
